Mustard oil is marked by a high content of the essential fatty acid alpha-linolenic acid, an omega-6 fatty acid with anti-inflammatory properties, according to Dr. Rajiv Sharma, author of the Diet Management Guide. Packed with lower levels of saturated fats, cholesterol-reducing and anti-oxidant properties and even essential vitamins, switching to cooking in mustard oil could be the wisest health investment one can make, he adds.
